To enhance the crispy orange crust, we rolled the balls into well crushed cornflakes before frying instead of rolling into the classic breadcrumb’s version.

1) Use arborio rice – it adds creaminess.

2) Cook the rice one day ahead. It is much easier to form the balls once the rice is completely cold. The bonus – it will absorb less oil when frying. Nobody would like oily rice balls. We want crispy crust. Not oily and soft crust load with calories.

3) Saffron add color. If you do not like the specific and amazing saffron taste, skip it.
