Stuffed Spinach Pasta Roll for Lunchbox – This is a dinner party first course to impress and a perfect lunch for your Lunchbox on the go. The best time to make this Lunchbox menu is when you make Ravioli with home made pasta dough. Roll on the machine ¼ of 300 g flour pasta dough and make 2 servings.

Make it up-to the baking stage the day or 2 before. So making the Sunday ravioli Lunch will produce a great Tuesday Lunchbox.

1) Without pasta machine – Roll-out the pasta dough to a 50×40 cm rectangle. Place the rectangle on a large piece of muslin, with one of the short sides nearest you. Spread the mixture thinly over the pasta leaving 2 cm margin along the short side that is further away from you. Moisten the 2 long sides with water. Starting with the short side that is nearest to you roll the pasta away from you just like you would do when making Swiss roll. Do not press it. Just roll until you have a 40 cm long sausage. Press the 2 open edges to seal the pasta. Then roll the muslin around the roll a couple of times and tie the 2 ends tightly with string.

2) With pasta machine – Roll out half the dough into a 90 cm strip. Cut the strip with a sharp knife into 50 cm lengths. Brush the long edge of one of the pasta strips with water then overlap the other strip by about 1 cm. Dust lightly with flour and press together. Seal the join by rolling over rolling pin. Or use a small roll with 50×20 cm size of rollout by the machine strip. You will receive 2 serving stuffed pasta rolls – 6 rolls.

When packing the rolls for your Lunchbox, set the sauce in XL or M lid containers.
