Chicken Liver Pâté

Instructions

1. Melt the butter in a frying pan. Add the onion and livers and cook until onion is soft and the livers are lightly browned and no longer pink in the center.
2. Add the sherry and boil until reduced by half. Cool slightly.
3. Turn the mixture into a food processor or blender. Add the soft cheese and lemon juice. Blend until smooth.
4. Add the hardboiled egg. Blend briefly again. Season with salt and pepper. If necessary add more lemon juice.
5. Pack the Chicken Liver Pâté into a mould or into individual ramekins. Smooth the surface.
6. Spoon a layer of clarified butter over the surface of the Pâté. Refrigerate until firm. Serve at room temperature with hot toast or savory biscuits.
