Bulgar wheat. a nutrition grain is, is made by steaming whole wheat berries and then drying and cracking them into small pieces. Cook like rice, either steamed plain or pilaf, or soak it to re-hydrate. Serve as accomplishment or use in salad.
To steam bulgar: Use 2 parts liquid to one part bulgar. Put the bulgar in saucepan with water or other liquid such as stock. Add flavorings if directed and bring to the boil. Cover and simmer for 12-15 min. or until tender.
To soak bulgar: Put the bulgar in a sieve, and rinse under cold running water until the water runs clear. Put the bulgar in a bowl. Cover with fresh cold water and soak for 1 hour or until plump. Drain, pressing out all excess moisture.
