This kimchi is great. You can add grated carrot for a slight sweetness. Each batch turns out a little differently – it depends on how hot you make it and on the slight differences in the amounts of vegetables. I add more garlic and ginger because I really like these flavors. But you can safely follow your preferences.
How to consume
Eat kimchi on its own as a side dish, similar to pickles. Add it to vegetable or protein dishes, salads, sandwiches, on rice cakes with hummus or baba ghanoush. It can also be added to soups. It’s very tasty!
