Sole is a type of flat fish. It lives on sandy or muddy bottoms in the north Atlantic and the Mediterranean. At the top is gray – brown and the underside is white. It grows to a maximum length of about 70 cm, and has small eyes close to each other on the right side of the body.
Sole is a preferred fish in cooking because of its soft, buttery, sweet flavor, versatility and its ease of filleting.
