Mushroom and spelt quiche (quick and easy)

Instructions

1. Put the flour, salt and softened butter in the bowl of the food processor fitted with the metal kneading hook. Turn the machine on. Mix ingredients for 10 seconds and pour in the water through the opening in the lid. Knead for another 1 minute. You will get 450 gr dough. Wrap 350 gr of the dough in plastic foil and leave to rest in the fridge for at least 1 hour or overnight. Freeze the rest for busy days for quick tarts for Lunchbox.
2. Roll out the pastry, flour a tart tin 23 cm diameter, then place the pastry at the bottom of the pan. Chill for 10 minutes.
3. Heat the olive oil in a frying pan. Cook the onion and mushrooms for 5 minutes, stirring frequently.
4. Beat together the eggs, cream fresh and theme leaves in a bowl. Season with pepper.
5. Drain and chop the dried tomatoes. Add to the eggs, along with the mushrooms from frying pan.
6. Spread the mustard over the base of the pastry. Pour over the mushroom mixture. Level with the back of the spoon.
7. Sprinkle with grated Parmesan cheese and bake in a preheated oven for 200 C for 200 minutes. Slice into 6 pieces.
