Baked spring rolls with chicken and veggies

Homemade spring rolls are nothing like the ones at Chinese takeout joints with unidentifiable mushy fillings and overly greasy.
Whatever we write here we are sure that they will be the preferred Lunchbox food this year as you can easily grab them with fingers and you have the endless possibility to fill with ingredients of choice.
We used fillo-pastry, for convenience. If you can find spring rolls in your supermarket, better use them. Cut the fillo pastries into 10 x 10 cm squares and fill with the filling.

You can prepare the filling on Sunday and let it be ready for the middle of the week.
