These tasty tasty bites are an great way of transforming bland-tasting zucchini into a sharply appetising dish.
So we rediscovered the zucchini tots by making them healthier by adding some super foods and baking them instead of frying. A light spray of oil is all that is required to create a golden crunchy crust, and it stays deliciously moist on the inside.
So enjoy these cute little Tots with us this week in your Lunchbox. They are the food for September to try!

This is also a great party food because they reheat really well! Or you could make them bigger and have them with eggs for breakfast – or dinner!
We like to make them in the oven and shape them into tater-tot shapes. But you can cook them on the stove too, even on the waffle iron. You’re only limited by your imagination!! This recipe makes around 40 tots.
