Festive Stuffed Turkey Roll

Instructions

1. Cut the turkey fillet through the middle and dissolve it like a book. Cover it with stretch film; Carefully line it to thin with kitchen hummer. Season with salt and pepper; Set aside.
2. Heat the olive oil for the filling in a pan. Stew the chopped onion for 3 minutes. Add the chopped garlic, diced bacon and salami. Cook for another 5 minutes. Add the mushrooms and cook for another 5 minutes. Remove the pan from the heat. Transfer to a bowl to cool.
3. Add the egg, shredded bread, breadcrumbs walnuts, parsley, salt, pepper, red pepper, juice and grated orange peel. Stir and spread over the fillet. Roll into a tight roll.
4. Put the turkey roll in a tray. Use kitchen thread to tie the roll well.
5. Transfer the roll to baking tray. Grease the roll with olive oil. Pour a glass of white wine into the pan. Cover the pan with aluminum foil. Bake in a preheated oven to 180 °C for about 1 hour and 30 minutes.
6. In the meantime, prepare the mixture for the crust. Beat the egg whites and add all other ingredients.
7. Remove the roll from the oven. Remove the foil. Cover the roll with the crust. Return the pan to the oven and bake for another 20 minutes without covering the meat or until the crust becomes crispy.
