Carrots is rich in antioxidants known as beta-carotene – a substance that transforms into a very important vitamin A in our bodies. Just one cup of raw carrots satisfies 113% of the daily requirements of vitamin A? Impressive! Beta-carotene is important because it protects us from cardiovascular disease and cancer, it helps regulate our blood sugar and improves our vision. Carrots are rich in other vitamins and minerals too, especially vitamin K and biotin, and are a good source of vitamin C, vitamin B6, B3, B1, B2, folic acid, phosphorus, potassium and manganese. Furthermore, carrots are an important source of dietary fiber which is important for our digestion. Also, carrots strengthen our immune system and purify our body. Because of its mild sweet flavor, carrots are suitable both for making savory or sweet dishes. We like to eat carrots raw as an addition to salads, but also we use it as the natural sweetener for smoothies and desserts.

For making this delicious nut free carrot vegan balls we used oats and warm spices – cinnamon, vanilla, nutmeg and ginger. Ginger and nutmeg gave the mixture nice aroma, but also a little exotic and spicy flavor. Don’t worry. It’s not too spicy.

This summer treat is kids-friendly. If you like more citrus, sour and refreshing taste, you can add a bit of a grated orange zest and orange juice to the mixture.
