According to kids, the perfect roast potato has a thick, golden, super crunchy crust, it is fluffy and moist on the inside and perfectly seasoned. Here is the best recipe for roast potatoes according to my kids and it makes the Best Crunchy Roast Potatoes because:
- Boiling and roughing up the potatoes allow the surface to absorb fat which is how you make potatoes crunchy and create the extra thick crust;
- The potatoes are lightly coated with cornflour which creates extra crunch;
- The potatoes are poured into a pan preheated with hot oil as the hotter the oil when the potatoes go in, the better the crust!
Note: use high smoke point oil, like sunflower oil
