Shakshouka

Instructions

1. Heat the oil in a heavy based frying pan and fry the onion and peppers for 3-5 minutes, until soft. Toss in the garlic and chilli and fry until vegetables begin to color.
2. Add the sugar and tomatoes and cook over a medium heat for 3-4 minutes until mixture is slightly pulpy. Season wit salt and pepper.
3. Using a wooden spoon, make for 4 indentations in the tomato mixture and crack an egg into each one. Reduce the heat, cover the pan, and cook until the whites are set. Scatter over the parsley and serve with fresh crusty bread.
