Ingredients
- 1 tsp salt
- 1 tbsp cooking oil
- 1 head finely chopped onion
- 2 cups chopped spinach
- 1 large grated carrot
- 1 tsp savory
- 60 g oat bran
- 1 large zucchini grated
- 3 eggs
- Pepper to taste
- 1/4 cup yogurt
- 1 tsp soda
- 100 low-fat cottage cheese

Instructions
- Preheat oven to 180 C. Prepare 12 muffin forms.
- In a pan heat the oil and butter. Sauté the onion, carrots and courgettes.
- Add the spinach. Continue cooking for 1 more minute. Transfer the whole mixture into a bowl to cool. Beat in a bowl the eggs, milk and soda, add pepper and cooled mixture of zucchini, carrots and onions. Add cottage cheese. Divide the mixture into the muffin, not more than 2/3 full.
- Bake in oven, heated at 180 C for about 35 minutes or until golden brown.
