Burgundy Beef Stew – Tradition dictates that you should use the same wine in this stew that you plan to serve with it, but a less expensive full-bodied wine will do for cooking. The stew reheats very well.

Bouquet garni, is still used all around the world, mainly to add some depth of flavor to kitchen pots that stew and simmer.

A bouquet garni is a square of cheesecloth with fresh herbs, and some spices, that are tied together and placed in a pot to enhance the flavor of what you’re cooking. They’re removed later and discarded.

You can make a bouquet garni of whatever you think would be delicious in your recipe. Look at the main ingredients in what you plan to cook, and think about complimentary flavors to add.

In the center of a square of cheesecloth, arrange herbs and spices gather the the corners to make a little package. Tie securely with kitchen twine.

for soups, stews, stocks

Ingredients:

  • 4-6 Parsley stems; 1 Bay leaf; 2-3 Fresh thyme sprigs plus any other green herb: sage, rosemary, tarragon, basil, cilantro, oregano; 1 teaspoon Black peppercorns optional
  • cotton twine+ square of cheesecloth optional

Place herbs and spices in the center of the cheesecloth square and gather up by the corners, tying with twine to secure.
