From 1 sheet of puff pastry you will get 8 bites. You can use your leftover blend of ricotta to form walnut sized balls to roll in the breadcrumbs and freeze.
When you need a quick bite of cheese, fry them in a casserole for 1 minute until golden.
Freezing options:
You can freeze the bites after they are baked and cooled to room temperature. You can also freeze them raw.
Defrosting after re-freezing the dough is no problem. it will slightly affect the baking process, but in this case it is not significant.
Ready and baked frozen bites, bake for 15 minutes in a preheated oven. Bake the raw frozen bites for 30 minutes in a preheated oven.
Baked and thawed ready-made bites, bake for 10 minutes or 25 minutes if raw and thawed.
