Being honest we didn’t start making Muesli because it’s healthier than store bought. We started because it’s cheaper and we wanted to control how sweet it is. Store bought is so sweet!

Then it evolved into a bit of a game, trying to come up with cute flavor combinations with berries, apple, apricot, blueberry, peach, raisin. You get the picture. Basically, desserts in breakfast form!

Here is the simple Muesli formula. The same base “formula” applies to both types of Muesli – Breakfast muesli and Muesli bars. The difference is in the steps and cooking methods.

Home-made Muesli Bars

Making breakfast muesli is as simple as it gets:

  1. Combine Dry ingredients,
  2. Combine Wet ingredients,
  3. Combine Wet & Dry,
  4. Spread on tray, bake,
  5. Add fruit at end.

The Secret is to stir the dried fruit in at the end, because some bits can burn

Making Muesli Bars for Lunchbox snack, the steps are:

  1. Add the fruit in at the beginning, because you cannot stir it in at the end.
  2. Use egg white and add them to bind the ingredients together to form clusters.
  3. Bake at a lower temperature to ensure that the fruits doesn’t burn and
  4. Cool in the turned off oven to finish the crisping and for the clusters to set.

The Secret:
You can never get the middle to go golden and crispy without the edges burning. You can’t stir the granola as it bakes, because otherwise you’ll break up the clusters. The secret is to spread the granola on the tray with a hole in the middle because even using a fan forced/convection oven it will not bake the way you want. Be sure this little secret makes all the difference!!
We use egg whites for Muesli bars, because we want light and tight Muesli bars without adding loads and loads of honey / sugar. Egg is the ultimate food glue, for everything from cakes to cookies, omelettes to meatballs.
