- 23 cm short-cut pastry
- 3 eggs
- 2 egg yolks
- 360 ml whipping cream
- 120 ml milk

Instructions
- Preheat a 200 °C oven.
- Fry the bacon in a frying pan until it is crisp and golden brown. Drain the bacon on paper towels.
- Scatter the bacon in the partially baked flan case.
- In a bowl whisk together the eggs, egg yolks, cream and milk. Season with salt and pepper.
- Pour the egg mixture into the flan case.
- Bake for 35-40 min. or until the filling is set and golden brown and the pastry is golden.
- Serve warm or cold. This makes the course perfect for the lunchbox.
